    Syracuse Food Truck Association Thinking Spring

    George Shattuck, owner and operator of Shattuck’s Paddy Wagon, pronounced the first food truck “rodeo” of the season in Syracuse a success — and despite the lingering winter is looking forward to weekly round-ups starting April 22 from 11 a.m. – 6 p.m..

    Six vendors — PB&J’s Lunch Box, The Chicken Bandit, Sarita’s Mmmpanadas, Mami’s Kitchen, Oompa Loompyas and the Paddy Wagon — participated in a St. Patrick’s Parade Day Rodeo March 14 at the Cosmopolitan Building, 1153 W. Fayette St., near Geddes Street. Shattuck said the event was well-attended and that visitors enjoyed visiting multiple trucks to check out the menu offerings, which ranged from burgers and sandwiches to ethnic fare like empanadas (Latin American pastry turnovers filled with savory ingredients) and loompyas (Filipino-style eggrolls).

    “The variety of choices was perfect. We had a wide cultural range of participants. I found that people were going to each vendor for a taste, which is exactly what we had hoped for,” Shattuck said in an email.

    Food truck rodeos with additional participants will be held Wednesdays in season, starting April 22 from 11 a.m.
    to 6 p.m..
